So recently, I’ve been craving fried noodles so bad that I decided to make a keto version of it. To be fair, nothing beats good old kway teow goreng which I used to buy when I was back home in Singapore. Food is so cheap there that most times, it makes more sense to eat out that cook! I am still currently on the ketogenic train, so this is a much healthier low carb version of the fried noodles. It’s not the same but it did satisfy my craving!

I am still searching for fresh kway teow noodles in the Seattle area – I can’t seem to find any. Most noodles I come across here are the dried type. Or if they are frozen, they are not kway teow! That said, I hope you enjoy this week’s video!

Ingredients

  • 10 pieces dried chilli rehydrated and deseeded
  • ¼ - ½ large red onion sliced
  • 10 shrimp peeled
  • 5 okra sliced
  • 1 cup spinach
  • ¼ small cabbage sliced
  • 2 eggs
  • 2 packets tofu shirataki noodles
  • 2 tbsp soy sauce - add more if needed or use salt
  • 1 bird’s eye chilli chopped
  • Oil for cooking high smoke point

Instructions

  • Deseed your dried chilli and soak them in hot water for about 20 minutes. Wash the dried shrimps too and soak them in warm water for about the same time. Blend both with a bit of water.
  • Heat up the oil. Add the onions. After the onions have softened a little, add the blended ingredients and fry till it’s glistening in oil.
  • Add in the shrimp and and let it cook. After that, add in the okra, spinach and cabbages one by one and mix well.
  • Once they look relatively cooked, make an empty patch in the middle of the pan. Add a little bit of oil and then add the two eggs. Break it up a little and let cook. Once the gooey consistency of the egg is gone, mix it together with everything else in the pan.
  • Add the shirataki noodles. Throw in some soy sauce to taste. Taste test. It may need soy sauce or salt depending on your preference.
