Simple Nasi Goreng

As our keto Thanksgiving recipes draw to a close last week, my husband and I decided to get off the bandwagon and take a cheat month. I have been in a plateau state, never above 138lbs but nerver below 134lbs. I seem to always gain weight during the winter, and then go back down to a healthy 128lbs in the summer. If this is something that happens to you too, let me know! It seems as if my body never adjusted to the cold growing up in a tropical country.

With all that said, December is my birthday month and I do tend to treat myself more often as it gets close. I’ve decided to make a simple nasi goreng recipe for the week. This looks like a lot of rice, and I thought it would have lasted for at least 4 days, but we basically finished it off on the second day! It’s so delicious, and as much as it isn’t an extravagant meal, fried rice is my comfort food and it tasted so homey to me.

Ingredients

  • 2-3 tbsp ghee
  • half chicken stock cube
  • 1 large shallot sliced
  • 1 tbsp garlic minced
  • 3 cups rice cooked
  • 2 carrots sliced
  • 1 tomato sliced
  • 2 cups chicken tenderloin sliced
  • 3 tbsp ABC sweet soy sauce
  • salt to taste
  • egg optional
  • 2 green onions sliced (optional)
  • Chili Paste Blend (blended)
  • 15-20 dried chili deseeded, soak in hot water for 10 mins
  • half red onion

Instructions

  • Heat the ghee. Stir fry chicken until it is cooked through and slightly browned.
  • Add chili paste. Add the chicken stock cube and mix.
  • Add slices shallots and minced garlic.
  • When the chili paste is fully cooked, add carrots and mix well.
  • Add sweet soy sauce (kecap manis) . Add less if you want it spicy. The soy sauce makes the paste sweeter.
  • Slowly add some rice and mix well with the paste. Keep adding rice bit by bit. Mix until all the rice is well incorporated.
  • Add salt to taste. Add tomatoes and mix.
  • Turn off heat and mix in the green onion.
  • Fry an egg sunny side up and enjoy with fried rice!
